The Spatulettes


Once a month, I get together with a lovely group of ladies and we share recipes, eat great food and chat. Topics covered range from diaper rash to first dates to crafting. We are a fun mix with a few teachers, a few stay-at-home moms, a pediatrician and an optometrist and some marketing gurus. We call ourselves "The Spatulettes."

The "theme" this month was Mexican food and it was all delicious! One thing I brought was guacamole. Here is my fail-safe recipe. It is fast, easy and a great way to repurpose all those tomatoes you have from the garden that won't be made into salsa or spaghetti sauce.

Guacamole

6 ripe avocados, skinned and pit removed, chopped
2 tomatoes, chopped
1 white onion, chopped
1 bunch of cilantro, stems removed and chopped
1 tablespoon of black pepper
1 1/2 tablespoons of salt
2 limes or lemons

Place the avocados, tomatoes, onion and cilantro into a large mixing bowl. Sprinkle with half of the salt and all of the black pepper. Stir well. Squeeze the lime or lemon over the mixture and then sprinkle with the remainder of the salt. If you are going to serve immediately, mix well and place in the serving dish. If you are going to refrigerate it, wait to stir until serving. Serve with tortilla chips, fresh veggies or pita bread triangles.

You can also spice the recipe up by adding a tablespoon or two of garlic or stirring in a can of diced jalapenos.
